Mediterranean Tomato Bruschetta with PDO Sitia Extra Virgin Olive Oil

Ingredients

4 slices of rustic bread, 2 ripe tomatoes, finely chopped, 1 garlic clove, Fresh basil leaves, Salt, PDO Sitia Extra Virgin Olive Oil

Instructions

Toast the bread slices until golden and crisp. Rub each slice lightly with the garlic clove while still warm. In a bowl, combine the chopped tomatoes, salt, and a generous drizzle of PDO Sitia extra virgin olive oil. Spoon the tomato mixture over the toasted bread. Finish with fresh basil leaves and an extra drizzle of olive oil before serving.

Greek Salad (Horiatiki)

Ingredients

3 ripe tomatoes, cut into wedges, 1 cucumber, sliced, 1 small red onion, thinly sliced, 100 g feta cheese, Kalamata olives, Dried oregano, Sea salt, PDO Sitia Extra Virgin Olive Oil

Instructions

Place tomatoes, cucumber and onion in a bowl. Season lightly with sea salt. Add olives and place the feta on top.  Sprinkle with oregano and drizzle generously with PDO Sitia extra virgin olive oil. Serve immediately.

Roasted Vegetables with Olive Oil

Ingredients

Potatoes, zucchini, peppers, Fresh herbs, Sea salt. PDO Sitia Extra Virgin Olive Oil

Instructions

Cut vegetables evenly. Toss with olive oil and salt. Roast at 200°C until golden.

Spaghetti Aglio e Olio

Ingredients

400 g spaghetti, 3 garlic cloves, thinly sliced, Chili flakes (optional), Sea salt, PDO Sitia Extra Virgin Olive Oil

Instructions

Cook pasta in salted water until al dente. Heat olive oil gently and sauté garlic until fragrant. Add chili flakes if desired. Toss pasta with the oil and serve immediately.
